Cooked chopped green onions (from Ironwood Farm) with chopped mushrooms in bacon fat. Seasoned with salt, pepper, garlic powder, basil & fenugreek powder. Added beef stew chunks, cut up tomatoes from our garden, added some unnecessary white eine,added sorrel and chard from Ironwood to wilt at the end.Linnae will probably only eat the beef.
I’m never making chicken curry again. Until next time. Chopped up the chicken and vegetables, added more curry powder, mayonnaise, cashews and fresh chopped green onions and cherry tomatoes. Needs a dried fruit, I think. Guess I WILL have to make it again… 😉
Last night’s leftovers atop fresh greens from Ironwood Farms.
Four chicken breasts topped with a dozen cherry tomatoes from the garden; one med white onion, sliced; about two cups frozen broccoli; one green bell pepper from the garden, sliced; seasoned with salt, pepper and at least a tsp of curry powder; a couple tablespoons of butter cut up in tiny pieces throughout. Covered with foil and baked for two hours at 275. Veggies still a bit crunchy, perfect! Mighty try bacon/fat next time instead of butter.
Radicchio and butter lettuce, sweet potato leaves, basil, kale, chopped zucchini, avocado and of course, shrimp…
Cooked the pork chops in a jar of home made spiced peaches with a little white wine added. Served with a salad of chopped carrot greens, chopped home grown zucchini, chopped home grown basil, chopped celery, cut up grape tomatoes on kale, drizzled with lemon juice. This worked because between the lemon and the basil I could not tell that I was eating zucchini!
I cubed an apple and set it to cook with the peaches from the pork chops. Added citrus peel, raisins and butter. This didn’t work so well as the ”cooked with meat” flavor is quite strong. The pork chops tasted great, however, so I will work on this. It makes a fine side dish, just not a good “dessert” option. I forgot to take a photo of the pork chops. You will have to take my word for it.
